Course Description: This course examines the historical processes that have informed the food on our plates. In particular, we will look at food as a medium through which to understand the processes of migration, invention, colonialism, imperialism, and capitalism that have shaped much of the Asia-Pacific world, including Japan and the United States. Students will have a clear understanding of the processes of colonialism and globalization that informed the spread and invention of different food cultures and cuisines.
Reflective Narrative: This course further developed my understanding of different cultures by looking at food from different cultures. Through this course I was able to understand the importance of food in certain cultures and what makes food special across different countries and cultures. I learned how food itself can become someone's identity and can be used as a way for people to express themselves. A main part of this course was doing assigned readings and writing short reflections on them. This was a way for us to not just read important articles and books, but also a way for us to develop an in depth analysis of what we are reading. Another important aspect of this course was the group project we had to work on. This group project allowed me to analyze an aspect of Japanese culture through a different lens. my group looked at Japanese cafe culture and how it has changed throughout the years to be a unique aspect of Japanese culture. We were able to analyze four different cafes in Japan each having their own unique atmosphere and theme. We utilized ArcGIS for this project and learned new ways to organize information through this website.
